Cauliflower recipe!
Well, I figured it out myself! Here's my new Cauliflower and Ground Chicken Soup!
2 cups frozen cauliflower and carrot mix
½ pound ground chicken
3 tbsp butter
1 tbsp dill
1 tbsp oregano
1 tbsp chopped garlic
1 tsp parsley
1 cup soy milk
¼ cup flour
1 cups water
2 stalks celery chopped
½ medium onion chopped
6 cubes chicken stock
Melt 2 tbsp butter in bottom of pot. Sauté onions and celery in the butter then simmer on low. Separate carrots out of the cauliflower mix and throw in pot with onions and celery. Boil cauliflower in water until tender then mash into little pieces. Brown ground chicken. Add chicken and cauliflower to pot. Add milk, water, chicken stock, flour and herbs. Heat until desired temperature. Garnish with parsley and soy cheese.
I froze half of this and since the cauliflower is all mashed up anyway I'm thinking it should hold up pretty good!

Cauliflower recipes
In the Angel Food box we bought a couple of weeks ago we received a bag of frozen cauliflower and carrots. The hubby won't eat cauliflower so I'm trying to find a recipe that I can use it in and freeze into portions for me to eat for lunches.

Angel Food Ministries Menu
The hubby and I recently ordered the $30 package from Angel Food Ministries, an organization that helps everyone get cheaper food. An associate of ours asked us to try it out and for $30 we thought, why not? So far we are pleased with our purchase.
When we went to pick up the food we donated right back the obvious milk products - the dried milk, the frozen pumkin pie and kept a few items like the frozen pizza that my husband could eat for a quick lunch. When I got home I read the ingredients closer and was surprised to find that the bacon wrapped steak had milk in it. The steak had been "pumped up" with a solution (which bothers me about the nutritional value but that's another post) and that solution had milk it. What? Milk in steak? Yes, milk in steak.

Shrimp Scampi Linguini
The hubby isn't coming home until later tonight and since I only had to cook for myself I decided to try something new.
A la Shrimp Scampi Linguini (except I used spaghetti because that's all I had)
5 cubes chicken broth
1 cup dairy free margarine
½ pound shrimp
one tbsp chopped garlic
2 chopped green onions
1 chopped mushroom
1 cup flour
small handful linguini
Take ends off shrimp. Boil noodles. In pan melt butter and add garlic, onions, mushroom. Let butter mixture get hot then add lightly floured shrimp to pan. Sauté lightly and let thicken. Then add 5 cubes chicken broth and mix together until desired consistency. Stir in noodles and serve.
When I make this for the hubby and I, I would also serve it with a salad and a bread stick or roll. I think it would feed four easily with the salad and bread.

Barbeque Beef Brisket
I made the best barbeque beef brisket for Sunday dinner. It was so good that I can't wait until lunch today to eat the leftovers!
I put it in the fridge Friday night so it would thaw then I put it in a large ziplock bag with garlic, onions, a bit of soy sauce and liquid smoke. I added about a cup of brown sugar and then filled the bag with water until it covered the brisket. I kept this in the fridge, marinating, until 11 o'clock Sunday morning.
Sunday morning I wrapped it in foil and put in on our gas grill as low as I could get the heat. While it was cooking I put the rest of the marinade in a pot on the stove, added about a cup of barbeque sauce and let it cook down. The brisket cooked until about two when I took it out of the foil and just let it cook on the grill. This was the first time I brushed it with the sauce mixture.
I brushed with the sauce about every hour, hour and a half, from that point on. I put some green beans on with garlic and turkey bacon and thawed and baked some homemade bread rolls.
I took the brisket off at six. We probably should have taken the brisket off between five and five thirty but it was still excellent.
I bet you wish I had a picture. Well, I don't. I was too hungry and too excited to eat the brisket that I forgot.

New Recipe Site!
I love recipe sites. I am always on the lookout for new recipes that I can make or revamp if they contain dairy. I recently came across a new site called www.foodconnect.com. This is the neatest site! It has much more than just recipes.
If you do the free sign up you get access to all these features. There are a lot of recipes, my favorite was the crispy honey wings, I cannot wait to try them, I mean, seriously they have the words crispy and honey in the name! You can add the recipe to your favorites or to your shopping list.
I really liked the shopping list part. I could just add a bunch of recipes and it would make the list for me! I do wish there was a way to remove individual ingredients or add different ones because I'm not going to be buying that feta cheese!
My favorite feature was the event planning section. You put in the date for the event, plan the menu and then print a shopping list for that specific party. You can also email your friends about the party and let them know about the menu or you can email your friends a recipe anytime you find one you like!
